Characterisation of Omega-3 Fatty Acids in Salmon Waste.

icon Objectives

This project investigated annual variations in the fatty acid profile of waste from the farmed salmon industry with a view to obtaining background data for omega-3 fatty acids in particular. The aim of the research was to quantify and characterise these important fatty acids with a view to assessing the potential for extraction and downstream incorporation into foods as nutritional supplements.
