Demand for quality marine food is expanding worldwide. The marine
food-processing sector was valued nationally at €723 million
in 2001. Fish and shellfish processing companies in County Donegal
provided employment for more than 1400 people in 2001. This section
of the Marine Biotechnology Centre is focussed on novel food technologies,
marine food flavourings, marine oils and other by products. |

Nationally the marine food processing
industry produced 63,786 tonnes of fishery waste by-products, 45%
of which was in the northwest region. This section of the Centre
is also focussed on extracting-value from the waste products of
the industry by research into areas such as the development of fish
offal fertilisers, chitin use, enzyme extraction from waste, fish
ensiling etc.
